251. Vanilla Tea Cake

Unpretentious cakes are cosy, homey, and so welcoming!
This plain vanilla cake is a slightly lesser sister to my cardamom cake and orange cake, but homey none the less. Light, fluffy, mild, and it's basically a hug in a cake.

I picked the recipe up online, where is was named it Fast Cake.
Snuggled up with a steaming cup of tea and a generous slice of this cake, or likewise for breakfast, this is a cake welcome anytime throughout the day.

Ingredients:

3 cups flour
1 Tbsp baking powder
1/2 tsp salt
1 cup butter, softened
2 cups sugar
4 eggs
1 tsp vanilla
1 cup milk

Method:

Preheat oven to 360F.
Butter and flour a bundt cake tin, set aside.

Sift the flour, baking powder, and salt; set aside.
Cream the butter and sugar together until pale.
Beat in the vanilla and eggs one by one.
Stir in the milk and flour mixture, alternating between the two until incorporated.

Pour the batter into the prepared tin, and bake for 40 to 50 minutes until a toothpick inserted comes out clean.

Let cool 20 minutes in the tin before inverting.
Consume warm or cooled, but I personally like it best after it has rested overnight on the counter.
