405. Carrot, Walnut, and Pomegranate Molasses Salad: To Go


Okay, we have already established how uncreative I get at naming foods I invent...
But that doesn't take away from the value of the actual dish.

This salad is exactly what the title says it is: grated vibrant vitamin A rich carrots, incorporated with protein and mineral-loaded walnuts, laced with tangy vitamin C screaming super food pomegranate molasses and a drizzle of heart-friendly olive oil.
Another plus: this is a great salad to-go, just remember to drizzle with the dressing just before consuming.
I didn't even need salt because the flavor was already so intense.



Ingredients: serves two

3 to 4 carrots
1/2 cup walnuts
3 Tbsp pomegranate molasses
3 Tbsp olive oil



Method:

Peel and grate the carrots.
Roughly chop the walnuts; incorporate with the carrots.
Divide the carrot-walnut mix into two sealable containers.
In a glass or beaker, combine the pomegranate molasses and olive oil.
Drizzle the salad with the dressing just before consuming.
