458. Skinny Chocolate Peanut Gelato


I am hesitant in applying the word healthy to a recipe, because more often than not, the correlation is usually a negative one. Healthy food is sometimes and wrongfully assumed as boring and tasteless.
Not so, and the proof is in the pudding... or in this case, in the ice cream.

This chocolate peanut butter gelato tastes and feels exactly like Baskin Robins chocolate peanut butter ribbon ice cream! I was astounded at first taste!
Impossible to believe it is dairy-free, sugar-free, virtually fat-free, and wonderfully guilt-free.
The secret lies in the frozen bananas. Ever since I discovered the Green Monster Smoothie, I have always has a stock of frozen bananas in the deep-freeze. If you are too, just remember to peel and slice your bananas before freezing them.
You can opt out of the peanut butter and proceed with the same directions, making simple chocolate gelato.

Ingredients:

3 frozen bananas
2 Tbsp cocoa
1 Tbsp peanut butter
1 Tbsp honey

Method:

Put all the ingredients in a food processor.
Blend until you have a soft-scoop gelato.
You can either freeze in a tupperware for a firmer scoop, or eat right away.
I personally preferred it immediately and always make it just before I want it.
