711. Cauliflower Mash


Cauliflower mash is a great alternative to mashed potato.
It is much faster and easier to make, as well as being much lighter to consume.

You can make it as light or as rich as you like by adjusting the cream and butter quantities. You can even make it a diet dish by choosing milk over cream. Grated cheese can also be added to make it a cheesy cauliflower mash.
A 10 or 15 minute boil is all that's needed to tenderize the cauliflower before letting the food processor do all the work.


Ingredients:

1 head cauliflower
1 cup cream or milk
4 Tbsp butter
1 tsp salt
fresh ground pepper
fresh ground nutmeg


Method:

Separate the cauliflower into florettes.
Drop in a pot of boiling water and boil for 10-15 minutes until a knife pokes it without resistance.
Drain the cauliflower and place is a food processor with all the rest of the ingredients (cream, butter, salt, pepper, nutmeg, and grated cheese if using).
Serve piping hot.

Thank you for sharing this recipe. I made it a couple days ago and I must say it is very good it is very similar to potatoe mash but the difference is a more sophisticated flavor and a lighter texture. I made it without nutmeg since my husband doesn't care for it too much unfortunately. For others who wants to try this recipe add the milk or cream slowly till you get the texture you like and make sure you do not cook the cauliflower for too long otherwise the mash will be on the thinner side. I'm definitely making it again. - Sarah
