855. Black and Blue Clafoutis


Clafoutis is a classic French dessert traditionally made with cherries. It is a batter that is something between a pancake and a custard, studded with fruit, and baked until just set. This beautiful velvety clafoutis uses blueberries and blackberries
Upon heating, the berries explode to release a deep purple inky juice which contrasts artistically with the puffed custard. It's as simple as it can get: whizz all the batter ingredients in a blender and pour it over the berries. After a 45 minutes stint in the oven, it is ready to be eaten with some whipped cream. It is recommended to be consumed warm, but it's also delicious cold.



Ingredients:

3 eggs
1/2 cup milk
1/2 cup cream
1 tsp vanilla
1/3 cup flour
1/2 tsp baking powder
1 cup powder sugar
pinch salt
1 cup blackberries
1 cup blueberries
1 tsp butter
1 Tbsp sugar


Method:

Preheat oven to 375F.
Butter the base and sides of an 8 inch pie dish and dust with one tablespoons of sugar.
Scatter the black and blue berries over the base of the pie dish and set aside.
In a blender, blend the eggs, milk, cream, and vanilla until pale and frothy.
Add the flour, baking powder, sugar, and salt. Blend until smooth and combined.
Pour the batter over the berries and bake in the preheated oven for 40-45 minutes until puffed, golden, and set in the middle.
Serve warm, preferably with freshly whipped cream or ice cream.

I've never had or made a clafouti before but I may just have to change that soon after seeing this plus my daughter has become a huge fan of blackberries this summer, too bad she doesn't save me any for baking with :) Masha'Allah
