913. Iraqi Breakfast Sticky Dates


This recipe aches my heart in nostalgia, wonderful family memories, and of a blessed and simpler time. I don't even think this dish has a name; it's just a breakfast staple in every Iraqi household considered too simple and common to be noted. It is in fact a broken down version of madgooga; packed with nutrients, energy, and wholesome goodness, it's a good idea to re-adopt these delicious dates every morning.
This dish is more of a method than an actual recipe: stuff dried dates with walnuts, drizzle with date molasses and tahini, and end with a sprinkle of roasted sesame seeds. If you make your own date molasses (it's really easy, see here), and read the tahini ingredients to make sure it has only one ingredient (sesame), then this only contains three ingredients and their derivatives. The dates keep well for a good while, but to be safe I store it covered and refrigerated.


Ingredients:

dried dates
walnut halves
tahini
date molasses
roasted sesame seeds


Method:

Slice dates from one side, keeping it intact, and discard the pits.
Replace the pits with walnut halves, and seal the date again around the walnut.
Arrange the dates in the serving dish, cut sides up.
Drizzle as generously or as little as you want with tahini, followed by dates molasses, and finish with a sprinkling of roasted sesame seeds.
