1064. Microwave Egg Bagel


One minute of prep, one more minute of cooking, and you've got a hefty, satisfying, and healthy breakfast to go or stay. The bagel, actually, is completely optional. You could forgo it for a carb-free scrambled omelette breakfast that is much friendlier to the figure. The result is surprisingly fluffy and far from the expected rubbery outcome.
The egg is scrambled with some delicious flavorings (herbs, cheese) and cooked in a buttered ramekin for one minute in the microwave. Any herb, and any cheese of choice for that matter can be used.


Ingredients:

2 eggs
2 tsp chopped dill
1 Tbsp shredded cheese
salt and pepper
smidge of butter
1 bagel


Method:

Using a microwave-safe container roughly the same diameter as  the bagel, butter the sides and bottom generously. Crack in the eggs, and scramble together with the fresh herbs, cheese, salt and pepper.
Microwave the eggs in the container with a damp paper towel loosely covering the opening for about 1 minute (up to 2 minutes depending on your microwave) on High. It is important you stir half-way through to make sure all the egg gets cooked.
Meanwhile, slice your bagel in half and toast. You can butter it too. Once the egg is cooked, loosen the sides with a fork and invert over you bagel. Douse with hotsauce and breakfast is ready.
