1162. Marshmallow Chocolate Cake


Loaded with sugar upon sugar in the forms of oreo, chocolate, and marshmallow, this simple cake is sure to please the little's palate.
It is a no-bake cake that needs some time to set in the refrigerator. The gelatin in the marshmallows helps set the whole thing together.


Ingredients:

2 Tbsp butter, diced
1 1/2 cups semi-sweet chocolate chips
2 cups mini marshmallows
1/3 cup milk
1 tsp vanilla
1 3/4 cups whipping cream
1 Oreo pie crust

For the topping:
1 cup whipping cream
2 Tbsp sugar
strawberries, for garnish



Method:

Add butter, milk, chocolate chips, and marshmallows to a large saucepan.
Heat over low heat, stirring constantly until chocolate and marshmallows have melted (it will take a while for the marshmallows to melt, keep stirring).
Remove from heat, stir in vanilla, pour into a large mixing bowl and let cool, about 45 - 60 minutes (it should be about room temperature).
Whip 1 3/4 cups heavy cream until very stiff peaks form. Fold into cooled chocolate mixture.
Pour chocolate mixture into Oreo crust and spread into an even layer.
Chill in refrigerator 3 hours.
For the topping, whip remaining 1 cup cream until soft peaks form. Add in sugar and whip until very stiff peaks form.
Spread over pie, garnish with strawberry. Store pie in refrigerator until ready to serve.
