13. Banoffee, My Way


Banoffee, a name created by the combination of Banana and Toffee, an amazing combination.
It is usually presented in the form of a pie, where the ingredients are layered. On a graham cracker or tea biscuit crumb crust, the dulce leche is spread, on which the banana slices are sprinkled, which is then topped with a rich layer of cream.
Sounds really good, but I liked to simplify matters by combining the ingredients and presenting it as a "dessert casserole" of sorts.




Ingredients:

1 can sweetened condensed milk
4 x 250g thickened cream
6 bananas, slightly ripe, sliced
1 pk plain tea biscuits, blended to powder

Method:

Boil the unopened can of sweet condensed milk in a large pot of water for 3 hours, adding more water as necessary to ensure the can is covered in water all the while.
CAUTION: Do not open the can whilst it is hot or it will explode, maybe causing severe burns!!
Leave the can to cool several hours or even overnight. The contents will be transformed into a luscious dulce leche (good enough to eat with some vanilla ice cream).
Whisk the can contents with the thickened cream until well blended.
Fold in the banana slices.
Fold in the biscuit crumbs.
Pour into the serving dish, cover, allow to chill overnight.
To serve, dust with a light layer of biscuit crumbs.
