37. Cornflakes Cookies


I got this recipe from a friend whilst still in middle school. I used Kellogg's Special K, but I don''t see why you cannot use any of your own favorite cornfakes in it.
It makes a great lunch box addition, and the best part is that there isn't a drop of fat (butter or oil) used in the recipe, so they can be enjoyed (almost) guilt-free!!


Ingredients:

1 cup flour
1 cup cornflakes
1/3 cup sugar
1 tsp baking powder
1/4 cup almonds, chopped
1 large egg
1/2 tsp vanilla
2/3 cup milk


Method:

Preheat oven to 350°F.
Combine in a bowl the flour, cornflakes, baking powder, sugar, and almonds.
Stir to evenly distribute the ingredients.
In a separate bowl, whisk together the egg, vanilla, and milk.
Add the milk mixture to the flour mixture and stir manually with a wooden spoon until just combined.
Drop by teaspoons on a non-stick silicone baking sheet.
Bake for 15 minutes.
