24. Fig Tart


The first figs of the season are here!! I had a surplus of figs and was just about to make a boring smoothie, when I came across his simple recipe in an out-of-the-way food blog (here).
It is really simple, and has a nice rustic feel to it.


Ingredients:

For the crust
1 1/2 cups flour
1/2 tsp sugar
1/2 tsp salt
1/2 cup butter
4 Tbsp ice-cold water

For the filling:
1 egg
1/4 cup brown sugar
1/4 cup ground almonds
1/3 cup cream
few drops vanilla
10 figs, quartered












Method:

To make the crust, pulse all the ingredients except for the water in a food processor, until resembling breadcrumbs.
As the machine is on, add the water until still in small pieces, when pressed together forms a ball. Wrap in plastic sheet and refrigerate one hour.

Preheat oven to 350°F.
Press into the tart mould, set aside.

To make the filling, whisk the egg, cream, sugar, vanilla, and almonds until well combined.
Pour into the tart mould.
Arrange the fig quarters in the mould.

Bake for 40 minutes.
Nice eaten warm with a drizzle of honey.
