43. Sage Crackers



I have a sage plant which has really grown. I didn't want it to go to waste, and there is only so much to be used in sage tea.
So I went online to search for constructive ways to make use of sage leaves, and found this adorable recipe for sage crackers. All I can say is, thank God for bloggers who do not shut down their blogs even after they abandon them!!



Ingredients:

2 cups flour
1 teaspoon salt
1 teaspoon baking powder
1 1/2 teaspoons sugar
4 tablespoons cold unsalted butter, cut into small  pieces
1 large egg
3 tablespoons cream
3 tablespoons milk
1 to 2 bunches sage (enough for 1 leaf per cracker)












Method:

In a bowl, whisk together the flour, salt, baking powder, and sugar. 
With a pastry blender, cut in the butter until the mixture resembles coarse meal.
In a separate bowl, use a fork to blend the egg, cream, and milk together until smooth.
Add the egg mixture to the flour mixture.
If crumbly, drizzle additional milk or cream over, by tablespoons, until the proper consistency is achieved. 

The dough should not be wet, but should still hold together when pressed.
Form the dough into two square or rectangular rods, wrap in plastic film, and chill in the refrigerator for at least one hour.

Preheat oven to 425°F.
Unwrap, and cut the rod into half centimeter slices, making a total of 40-50 slices in all.
Place a sage leaf on one side of the slice, and place it leaf-side down on the baking sheet.
Bake for about 20 minutes (keep a close watch over it), and if necessary, broil for 2-3 minutes to give a golden color. Remove and let cool.

Very tasty on their own, these crackers are the perfect accompaniment to all sorts of cheese, cured meats,  smoked fish, boiled eggs... the list goes on...
