90. Grilled Fish with Parsley Sauce


This is a wonderful light summer meal, and so versatile. The size of the fish and the actual fish is entirely up to you.
A whole (head, body, and tail) and cleaned (scaled and gutted) fish is what we are looking for. Of course, the cooking time must be adjusted according to size: the bigger the fish the longer to time.
The fish is plainly flavored with olive oil and salt. Therefore the fresh and vibrant parsley sauce is the perfect complimentary seasoning.



Ingredients:

For the Fish:
whole cleaned fish
olive oil
salt&pepper

For the Sauce:
1 cup chopped parsley
1 lemon, juice
1 spring onion, chopped
1 clove garlic
1/4 cup mint
1/4 cup olive oil




Method:

To make the sauce, put everything in the blender and blend till smooth.
Rub the fish inside and out with the olive oil and season.
Grill over coal or in an electric griller the fish 4 to 6 minutes per side.
Serve together with the sauce.
