75. Karak Tea


This is not your ordinary tea-and-milk. It takes tea on a whole other level. This is a staple in Qatar, everywhere you go it is readily available. The best is, oddly enough, the 1 or 2 riyal karak you get from these tiny tea stalls on the side of the road.
I think it was the Indians who brought it with them all these generations ago. You can make it using some spices (like cardamom, saffron, cinnamon...) or none at all.



Ingredients:

1 litre water
3Tbsp loose tea
2 cans evaporated milk
5 Tbsp sugar
1/2 tsp cardamom powder



Method:

In a large kettle, bring the water to a rolling boil.
Add the tea leaves, boil 3 minutes longer.
Add the cans of milk, reduce the heat, simmer 5 minutes.
Add the sugar (more or less to taste) and stir to dissolve, and the cardamom as a final touch.
