87. (Sun) Dried Tomatoes


This gem is so easy and economical to make, and all it takes is tomato and salt!
Dried tomatoes are so expensive to buy, and are almost sure to come with a whole lot of preservatives.
The good news is that you can make them, pop them in the oven at a very low temperature, go to sleep, and wake up with these little gems transformed right in your oven. Since they have no preservatives, I would suggest either bagging them in a zip-lock and freezing, or covering them with olive oil and a clove of garlic or two and refrigerating it.
Note that you may use cherry tomatoes instead of regular, just don't go to sleep because the drying time will be drastically reduced.




Ingredients:

tomato (I used regular 3 centimeter diameter tomatoes)
salt

Halved tomatoes.

De-seeded tomatoes.

Dried tomatoes.



Method:

Wash, dry, and halve the tomatoes.
Gently de-seed them.
Place on a baking sheet and in a preheated 200°F oven.
My tomatoes took between 12 to 15 hours in the oven.
They should feel leathery and not completely brittle dry.
Bag and freeze or preserve in oil for storage.
