128. Greek Salad


Greek food is heavily influenced by its neighboring Eastern countries than the Western.
This is why we may find many similarities and overlaps in Greek, Turkish, and Arabic cuisine.
I suppose this salad to the Greek is the equivalent of the Farmer's Salad to Iraqis: it also uses staples easily available and affordable to that region.



Ingredients:

For the salad:
1 head lettuce, coarsely chopped
2 tomatoes, wedges
2 cucumbers, sliced
1 spring onion, sliced
1 cup olives, pitted
1 cup feta cheese, cubed

For the dressing:
1/4 cup lemon juice
1 tsp salt
1/2 tsp sugar
1/2 tsp dry basil
1/3 cup olive oil





Method:

Make the dressing by whisking all the ingredients together, set aside.
Make the salad by layering the lettuce, tomato, cucumber, spring onion, olves, and cheese.
Dress the salad just before serving.
