138. Potato Gratin


Need I mention my preference for versatile meals?
This is a potato recipe that is generally served as an accompaniment, but with a few changes can be converted to a wholesome main dish.
Shredded boiled chicken may be added, for instance. Or to keep it vegetarian, one may add spinach and mushrooms, enhanced with garlic.
I would have preferred to use cream in lieu of the milk, but decided to cut a few calories.


Ingredients:

4 large potatoes, pre-boiled
50g cheese, grated
salt&pepper
1 1/2 cups milk






Method:

Pre-heat the oven to 420°F.
Roughly mash the potatoes with a fork in an oven-proof dish.
Grate the cheese on top, season with salt and pepper and a drizzle of olive oil if desired.
Pour over it the milk.
Bake for 40 minutes.
