140. Cardamom Cake


No one makes cardamom cake as good as my aunt's. Even me. But I do come pretty close.
This is a delicious cake with some steaming hot tea.
It reminds me of Bilbo Baggins because I really want to insert an "Elevenses" meal between second breakfast and lunch... on non-Ramadan days of course!
Cardamom is so fragrant and, well, kind of like delicious perfume for the mouth in the best possible way.
The best part about making this cake is that it is made entirely using a food processor.



Ingredients:

2 cups sugar
1 cup oil
4 eggs
1 tsp vanilla
3 1/2 cups flour
2 tsp baking powder
2 tsp ground cardamom
a pinch of salt
1 cup milk

Sugar and oil.
Add eggs and vanilla.
Flour, baking powder, cardamom, salt.
Add milk.
Unbaked cake.
Baked cake.


Method:

Preheat oven to 380°F.
Process the sugar and the oil in the food processor for 2 minutes.
Add the eggs and the vanilla, process for 2 to 3 more minutes.
Add the flour, baking powder, salt, and cardamom, process until just combined.
Add the cup of milk, and process until homogeneous, less than a minute.
Pour the batter in a buttered and floured cake tin.
Bake for 60 to 65 minutes.
Best consumed the day after baking.
