230. Cheese Zaatar Finger Sandwiches


These little sandwiches are one of her lesser concoctions, which she would probably oppose its being featured as a recipe. But I loved it so much that I wanted to share it.
They were presented at two different occasions, each time a little differently from the other. The first time was in little bread buns, using generously thick slices of cheddar cheese.
The second time was in mini pita bread, that would disappear in two bites.
Store-bought bread buns (or pitas) make this a breeze to make.
I made my own buns using this recipe, and grilled some Haloomi cheese to replace her cheddar.
Each cheese lent its own character to the sandwich, and I highly recommend trying both.



Ingredients:

25 mini buns
1 cup zaatar
1/2 cup olive oil
2 1/2 pk haloomi cheese
2 medium tomatoes
2 spring onions
50 leaves basil or mint


Method:

Mix the zaatar and olive oil to forma paste; set aside.
Slice the hallomi cheese into thick slices (each packet of 250g should give you 10 slices.
Heat a non-stick pan over medium heat.
Sear the haloomi on both sides until golden, remove on a plate and let cool.
Slice to tomatoes; set aside.
Slice the spring onion; set aside.

Slice the (completely cooled) bun in half.
Spread a teaspoon of the zaatar mix on the bottom half.
Top with a grilled slice of haloomi, top that with tomato and spring onion, then two leaves of basil (or mint), and cap with the bun top.
Secure with a toothpick.

So, this is the order of layering, starting from bun bottom half and working our way up:
bun bottom
zaatar mix
cheese
tomato
spring onion
basil (or mint) leaves
bun cap.

Enjoy with a steaming cup of tea.
