247. Peanut Butter Cornflake Balls


These peanut butter cornflake bites are a must for all peanut butter lovers.
The combinations of texture and taste are incredible.
Chewey, crunchy, a little bit sweet, a little bit salty, and a whole lot of deliciousness!

I came across a picture of these on pinterest, which led me back to the original blog post by "stickygooeycreamychewy."
The recipe is simple enough to make with children. It is straight-forward and requires no baking.
The chocolate drizzle at the end is completely optional and will not take away any of the great taste if omitted.



Ingredients:

1 cup sugar
1 cup corn syrup
500g peanut butter, crunchy or smooth
6 cups cornflakes
100g chocolate, optional



Method:

Put cornflakes in a large bowl, set aside.
Combine sugar and corn syrup in a saucepan over medium-high heat.
Stir until the mixture comes to a full boil.
Remove from heat and stir in the peanut butter; mix well.

Pour peanut mix over the cornflakes and toss to coat all the cornflakes.
Using an ice cream scoop or tool of your choice, scoop out balls and place on a cookie sheet to cool.

Melt the chocolate, if using, in a bain marie or in the microwave until smooth.
Drizzle the chocolate over the cookie balls.
Allow the cookies to cool completely and firm up before consuming.
