351. Smore Brownies


Smore is an abbreviation of "give me some more!"
Or at least I would think so.
Like almost anything American, this is highly addictive and plop-on-your-side heavy.
Seriously, I ate one forkful and was delighted by its deliciousness. I then ate another forkful, and was overwhelmed by how rich and heavy it is. I literally could not eat anymore... but I still wanted more!

My sister made this and I just photographed. She doesn't remember where she got the recipe from, but here it is nonetheless.
Note that my sister went through all the trouble of making the brownies. You (and me) could easily use the packaged brownies instead.


Ingredients:

For the biscuit layer:
1/4 cup  butter, melted
10 digestive biscuits

For the brownie layer:
1/2 cup unsweetened cocoa powder
1/2 cup  flour
1/2 tsp baking powder
1/4 tsp salt
1/2 cup butter
1 cup sugar
2 eggs
1/2 teaspoon vanilla

For the topping:
350g plain milk chocolate bars
300g mini marshmallows



Method:

Preheat oven to 350F.
Lightly grease an 8×8 baking dish with butter.

To make the crust:
In a food processor, process the biscuits until fine.
Continue processing while adding melted butter in a steady stream, until mixture is combined and looks like wet sand.
Transfer the biscuit mixture to the prepared pan and  press to form the crust.
Bake until crust browns, 20-25 minutes.

To make the brownies:
In a medium bowl combine the cocoa powder, flour, salt, and baking powder; set aside.
In a medium sauce pan over medium heat, melt the butter.
Once melted, remove from heat and add sugar; whisk until well combined.
Whisk in the eggs, one at a time, until combined, and the vanilla.
Beat the flour mixture in completely.
Spread the batter on top of the cooled biscuit crust and bake for 30-35 minutes or until a toothpick inserted in the middle comes out with a few crumbs clinging to it.

While the brownies are still warm, lay chocolate bars on top and allow them to melt for 5 minutes, then pour the marshmallows over the top, covering the brownies evenly.
Allow to cool completely.

Once the brownies are cooled to room temperature, turn your broiler to high.
About 5 minutes before serving, place the brownies directly under the broiler and allow the marshmallows to toast. This should take about 2-3 minutes. Leave the oven door open and watch it like a hawk as it could turn from brown to black within seconds!!
Remove, cut, and serve.
