356. Easy Tomato Tarts


This is one of the easiest and simplest savory tarts around.
The convenience of golden and flaky puff pastry, topped with fresh and simple ingredients, finished off with molten cheese makes this child's play to make.

Using sun dried tomato pesto makes this tart that much better.
You can make this tart in simple or multiple portions, with hardly any more work; and you can also choose to use cherry tomato or regular tomatoes.
Served next to a simple green salad, this is a simple lunch or dinner reminiscent of lazy summer days.



Ingredients:

puff pastry
sun dried tomato pesto
fresh tomato, thinly sliced
mozzarella cheese


Method:

Preheat oven to 420F.

Place puff pastry squares on a baking sheet.
Spread a teaspoon of tomato pesto over the pastry square, leaving a small border.
Top, in a single layer, with the fresh tomato slices.
Top the tomato slices with shredded or torn mozzarella cheese.

Bake for 20 to 25 minutes, until the pastry has puffed and browned.
Optionally, sprinkle with some fresh herb leaves before serving.
