398. Creamy Baked Fish


This baked fish dish encompasses most characteristics of comfort food.
Creamy, cheesy, flakey, crispy, and comforting.

I think that it might even be liked by those adverse to fish, as you can use any white fish fillets and the fishy taste is not too pronounced.
Courtesy of The English Kitchen, I think this is a typically British sort of dish, and is so simple to whip up at any time.
Pairs extremely well with most types of cooked potato or grains.



Ingredients:

6 white fish fillets
1 lemon
salt and white pepper to taste
200g emmental cheese, grated
1 good cup of cream
2 tsp dijon mustard
1/2 cup soft fresh bread crumbs (1 slice of bread, crumbed)
1 Tbsp olive oil


Method:

Preheat the oven to 400F.
Butter a baking dish large enough to hold all of the fish fillets in one layer.
Place the fish into the baking dish, presentation side up.
Season well with salt and pepper.
Squeeze the juice of the lemon over top.
Sprinkle the grated cheese over all.
Whisk the cream and mustard together, pour evenly over top of the fish.
Sprinkle over the bread crumbs and drizzle with olive oil.
Bake for 35 to 40 minutes, until lightly browned on top and the fish flakes easily with a fork.
Serve hot. This goes very well with mashed potatoes or rice.
