401. Sunflower Seed Crackers


I like crackers, they are a very pleasant treat for me.
Little did I know how simple and delicious it is to make yourself.

I admittedly followed a guideline from King Arthur, but made many changes, like incorporating bran, oats, and sunflower seeds into the mix.
The thinner you roll out the dough, the more golden crispy it will get.
Best of all? No chemicals and preservatives we can't even pronounce.
Delicious on their own or accompanied by a dip (such as this Greek feta dip).
You can make he same recipe using all flour and leaving out the ran and oats if you like.




Ingredients:

2/3 cups semi-whole wheat flour
1/3 cup bran
1/4 cup oats
1 1/2 tsp sugar
1 flat tsp salt
1/4 tsp paprika
1/4 tsp powdered garlic
pinch black pepper
1/4 cup (50g) cold butter
1/4 cup cold water
1/3 cup sunflower seeds




Method:

Preheat oven to 400F.
In a food processor, place the flour, bran, oats, sugar, salt. paprika, and powdered garlic.
Give it a whiz to distribute ingredients.
Add the cold butter and whiz until butter disappears.
As the machine is running, stream the cold water until wet crumbs are formed.
Tip out the mixture, mix in with your fingers the sunflower seeds, then compress the batter to form a firm ball.
Roll out as thinly as you can directly on a non-stick baking tray or a silpat.
Score (carefully so as to not damage what it's on) the rolled dough into whatever shapes you want.
Bake for 10 to 15 minutes until it starts to brown around the edges.
Let cool completely on the baking pan, then simply break into pieces using the scored lines as a guide.
