413. Mediterranean Salad


This salad just screams summer and health!

The combination is undoubtedly mediterranean, even reminiscent of Greek Salad.
The salad is an exploration of tastes and textures, and the haloomi cubes and the whole fresh mint leaves really add a special touch.
The entire salad is laced with a mild and flavorsome balsamic vinaigrette, inspired by the dressing of Pumpkin-Feta Salad.



Ingredients:

1 romaine lettuce head
3 cucumbers, deseeded
2 plump tomatoes, in wedges
1/2 cup kalamata olives
1 cup haloomi cheese cubes
1/2 cup fresh mint leaves
1 medium onion
1/2 tsp salt
1/2 cup vinegar

The dressing:
6 Tbsp balsamic vinegar
1 tsp honey
1 tsp salt
1 tsp mustard
12 Tbsp olive oil




Method:

Slice the onion, put in a small bowl with half a teaspoon of salt and the half cup vinegar.
Stir and set aside while you make the rest of the salad.
Cut the lettuce into thick shreds, place in a large salad bowl.
Add the sliced and deseeded cucumber, tomato wedges, kalamata olives, cubed cheese, and mint leaves.
Make the dressing by whisking all the dressing ingredients together.
Drain the onion from the vinegar and discard the vinegar.
Add the onion to the salad.
Add the dressing and toss the salad just before serving.
