Very much like cabbage, cauliflower is a vegetable prone to misrepresentation and has gained the false reputation of being a boring vegetable.
Prepared correctly, this is a vegetable that will knock your socks off in disbelief at how such a humble vegetable got transformed to very moreishly sweet and nutty quality that got coaxed out when fried. Tarator is a sesame paste sauce, used for a variety of foods, from a shawerma sandwich to a dipping sauce to a salad dressing. Its lemony taste is the perfect balance for the rich fried cauliflower.

Ingredients:
1 head cauliflower
vegetable oil, for frying
For the tarator:
1/3 cup tahini
1/2 clove garlic, crushed
1 lemon, juice
1 pinch cumin
1/3 cup cold water
1 tsp salt
To decorate:
chopped parsley
fresh pomegranate seeds
Method:
Cut the cauliflower into bite-sized florettes.
Fry, in batches, in hot oil until a golden brown and tender.
Remove and let cool on kitchen paper to drain from excess oil and season lightly with salt.
Meanwhile, make tarator: whisk together the tahini, garlic, lemon juice, cumin, salt, and cold water until smooth.
To serve, arrange fried cauliflower in serving dish, and dollop the tarator sauce over it.
You can optionally sprinkle with some chopped parsley and fresh pomegranate seeds.
