527. Peanut Butter Tray Cake


This is a naughty cake that will have you stuffed from the first slice and which kids will gobble down like there was no tomorrow.
If you want to indulge your inner child, this recipe would do just fine.
I was intrigued to make it as the Pioneer Woman says her mother-in-law passed it to her, and she's got a lot of variations using the same basic cake recipe.
Her frosting though was a fail for me, so I just frosted the completely cooled cake with nutella, because who doesn't like nutella.


Ingredients:

2 cups Flour
2 cups Sugar
1/4 tsp Salt
1/2 cup Buttermilk
2 whole Eggs
1 tsp Baking Soda
1 tsp Vanilla
1 1/2 cup Butter
1/2 cup Peanut Butter
1 cup Boiling Water
Nutella, to frost


Method:

Preheat oven to 350 F.
Butter and flour a sheet pan.
In a large bowl, stir together flour, sugar, and salt. Set aside.
In a small bowl, whisk together buttermilk, eggs, baking soda, and vanilla. Set aside.
In a medium saucepan, melt the butter. Stir in peanut butter until smooth. Add boiling water, let the mixture bubble up for about 10 seconds, then remove from heat.
Pour the peanut butter mixture over the flour/sugar mixture and stir until halfway combined. Pour in the buttermilk mixture and stir gently until the batter is smooth. Pour the batter into the prepared sheet pan and smooth the surface.
Bake for 40 minutes, then remove it from the oven.
Let cake cool completely before frosting with nutella.
