556. BLT Salad


Sometimes a boring and repetitive salad can be completely transformed with a simple addition or two.

The old lettuce-tomato-cucumber salad gets vamped with not-so-new ingredients, like avocado, feta cheese, and crispy beef bacon.
BLT stands for the modern classic subway sandwich of bacon-lettuce-tomato.
Using cherry tomatoes is optional, but it is more flavorsome and presents better than a regular tomato.
Tossed in a simple vinaigrette, this salad makes for a great light meal.
It is worth noting that once dressed, the salad is best immediately served, as it does not hold up well with time.


Ingredients:

1/2 head iceberg lettuce
1 large avocado
1 cup cherry tomatoes
1 cucumber
1/3 cup chopped coriander
4 rashers beef bacon
1/3 cup feta cheese

Dressing:
2 Tbsp lemon juice
1 tsp mustard
3/4 tsp salt
1/4 cup olive oil



Method:

Cook the bacon in a pan with no additional oil until it's crispy. Drain on absorbant paper and cut into thick strips.
Meanwhile, chop the lettuce, halve the cherry tomato, cube the avocado and feta.
Put everything in a bowl, followed by the bacon.
To make the dressing, put the lemon juice, mustard, and salt in a jar, seal well, and shake until the mustard and salt dissolves. Add the oil and shake again to homogenize.
Note that if you put the oil in without dissolving the mustard first, you risk having mustard clumps.
Drizzle the dressing over the salad, toss, and serve immediately.
