One more delicious than the other, and not pretty much topping the list are these beautiful zaatar rose puffs. Come to think of it, they also resemble turban, right?
Of course, you can use store bought puff pastry, but I am really enjoying the simplicity of making my own with much better results than ready-made.
I made half a batch of puff pastry and got 7 roses. A full batch yields 14.
Ingredients: makes 14 roses
1 batch puff pastry
5 heaped Tbsp zaatar
5-6 Tbsp olive oil
egg for egg wash
Method:
Preheat oven to 420F.
Divide the puff pastry in half and roll thinly into two large equal sized rectangles.
Mix the zaatar and olive oil into a pasteand spread over one of the rectangles.
Top the zaatar rectangle with the other pastry rectangle, and pless lightly to adhere.
Starting from a short side, cut the "sandwiched" pastry into 14 long strips.
Delicately twist each strip into a spiral.
Roll each strip on itself to form a "rose."
Carefully transfer to a baking tray and brush with egg wash.
Bake for 20-23 minutes until puffed and golden.
