600. Dukkah Puffed Roses


These dukkah rose puffs apply the same technique used in the zaatar rose puffs.

Having made my dukkah, I am experimenting the different ways to use it.
Of course, you can use store bought puff pastry, but I am really enjoying the simplicity of making my own with much better results than ready-made.
I made half a batch of puff pastry and got 7 roses. A full batch yields 14.


Ingredients:

1 batch puff pastry
1/2 cup dukkah
egg wash for brushing


Method:

Preheat oven to 420F.
Divide the puff pastry in half and roll thinly into two large equal sized rectangles.
Spread the dukkah over one of the rectangles.
Top the dukkah rectangle with the other pastry rectangle, and press lightly to adhere.
Starting from a short side, cut the "sandwiched" pastry into 14 long strips.
Delicately twist each strip into a spiral.
Roll each strip on itself to form a "rose."
Carefully transfer to a baking tray and brush with egg wash.
Bake for 20-23 minutes until puffed and golden.
