632. Avocado Haloomi Salad Cups


This is a fresh and summery idea to serve salad for people who love avocado.
You can make almost any salad you like, and spoon it into a ripe avocado half.

You can also make it as light or as substantial as you deem fir for the moment.
Grain salad or bean salad can make a meal of this idea.
I added grilled haloomi to my salad, but you can also add some chicken or shrimps as well.
Ripe avocado is key here, since it is the main feature, you do not want to serve hard inedible avocado.


Ingredients:

1 ripe avocado
2 thick slices haloomi cheese
2 large lettuce leaves
2 Tbsp corn
1/2 spring onion
1/2 lemon, juice
2-3 Tbsp olive oil
salt & pepper


Method:

Cut the avocado in half, remove the pit, and score the flesh into diamond shapes all the way down without piercing the skin.
Grill the haloomi slices in a pan over medium-high heat until golden on both sides.
Mix the shredded lettuce,corn, sliced spring onion, lemon juice, olive oil and salt and pepper in a bowl.
Add the sliced haloomi to the salad.
Spoon the salad into the avocado halves and serve.
