746. Chinese Chicken Noodle Soup


This is the perfect multipurpose soup. Down with the flu? This is your answer. Fancy something aromatically Asian? Look no further. On a diet? This is not only healthy, but also really low on calories. Cold from the freezing weather? This will warm you right up.
Every single ingredients shines and contributes to this amazing soup. We have the sesame oil, garlic, ginger, chilli, spring onion, coriander, chicken, noodles...
Serve with fresh lime wedges for that extra zing and dose of vitamin C.


Ingredients:

2 Tbsp sesame oil
2 garlic clove, crushed
thumb-sized ginger, peeled and grated
1 large red chili, chopped 
4 spring onions, chopped
1 cup canned sweet corn
1 1/2 cups shredded chicken
4 cups chicken stock
1 Tbsp fish sauce
3 Tbsp soy sauce
1/2 cup coriander, chopped
1/2 cup vermicelli noodles


Method:

In a pot, saute the garlic, ginger, and chilli in the sesame sauce until sizzling and fragrant.
Add the spring onion, corn, and chicken; toss to make sure it gets nicely coated in the oil and garlic.
Pour in the stock, fish sauce, soy sauce, and coriander.
Just before it comes to the boil add the vermicelli noodles; boil for just a minute or two more before serving with lime wedges.
