Grilled ananas (pineapple) is a must-try. Grilled ananas and spicy chicken skewers is even more so. There's a delicate line of using fruits in savory dishes that is being increasingly defied to great success.
Where it was considered to be only exotic and gourmet food to apply the combo, it is now simple everyday dishes like this one that break the stereotype. The smokiness off the grill rounds off these kebobs perfectly, but if you do not want to fire the grill, you could simply broil them in the oven.
Ingredients
half an ananas, cubed
1 red bell pepper, cubed
1 red onion, cubed
2 chicken breasts, cubed
1/2 cup ananas juice
1/4 cup soy sauce
1 tsp fresh ginger, grated
chili flakes to taste
tobasco, to taste
1 tsp salt and pepper
Method:
In a medium bowl, combine ananas (or orange) juice, soy sauce, ginger, chili flakes and tobasco.
Add chicken and toss to coat.
Cover and refrigerate for at least an hour or overnight.
Building your kebabs, alternate chicken, pineapple, bell pepper and onions.
Discard marinade.
Grill on medium heat until chicken is charred and cooked through.
