812. Omani Coconut Chaklama


This month's MENA Cooking Club feature is Oman. The MENA Cooking Club explores the differences and similarities of the Middle East and North African countries through local cuisine. Previous entries include Algeria, Bahrain, Djibouti, Egypt, Iraq, Jordan, Lebanon, Malta, and Morocco.
Oman is an Arabian Gulf State rich in traditions and cultural cuisine. The prominence of coconut in the Arabian Gulf is a testament to the arab-Indian relations stemming generations ago. Very similar in concept to the Iraqi Coconut Macaroon, this is a modernized version of the Omani Chaklama utilizing the convenience of sweetened condensed milk.



Ingredients:

4 cups desiccated coconut (400g)
1 tsp vanilla
1 tin Sweetened Condensed Milk (397g)
1 tsp baking powder
1 Tbsp butter, softened


Method:

Combine all ingredients in a large bowl until a soft dough forms.
Form the coconut dough into small balls, place the coconut balls in a large baking dish leaving spaces between each ball.
Bake in a 350F preheated oven for 15-20 minutes or until golden brown.
Allow to cool and serve.

المكونات:
4 أكواب أو 400 غ من جوز الهند المجفف
1 ملعقة صغيرة من مسحوق الفانيلا
1 علبة أو 397 غ من حليب نستله المكثف المحلى
1 ملعقة صغيرة من البيكينغ باودر
1 ملعقة طعام من الزبدة غير المملحة

الطريقة:
تُمزج كافة المكوّنات بعضها مع بعض في وعاء كبير حتّى تشكّل عجينة طريّة.
تُقرّص عجينة جوز الهند إلى كرات صغيرة، وتُصفّ الكرات في صينية خبز كبيرة مع ترك مسافة فاصلة بين كلّ كرة وأخرى.
تُخبز في فرن محمّى على حرارة 180 درجة مئويّة لمدّة تتراوح بين 15 -20 دقيقة أو حتّى يصبح لونها بنياً ذهبياً.
تُترك جانباً حتّى تبرد ثم تُقدّم.

  10. Marhaba Maryam.. these look yummy...ill be making these this week...love anything coconut...and not too sweet...did u use sweetened or unsweetened coconut flakes? i was thinking unsweetened?

  11. Marhaba! Definitely unsweetened coconut as the condensed milk is already sweetened. I hope you enjoy them as much as we did, they were lovely.

  12. well...this recipe didnt work for me...followed it to the letter...they spread to thin wafers and got burnt on bottom...what a shame..i dont understand why ?

  13. the only thing i can gather from your pictures that varies form my attempt,, is my coconut was shredded..your seems to be powdered

    1. That's such a shame! My coconut was finely shredded and unsweetened, not powdered. I cannot imagine why it didn't work out as it's such a straightforward recipe. The only two things I can think of is either too much butter was added (1 Tbsp is 12 grams) or maybe evaporated milk was accidentally used instead of sweetened condensed milk which has sugar whereas the evaporated milk is runny and without sugar. Oh and another reason they might have spread too thin is not enough coconut (recipe calls for a whole four cups). Do let me know if you managed to find out what went wrong!

  14. ...I used one tablespoon of butter. and the four cups shredded /unsweetened coconut ...and sweetened condensed milk,.....doubt I will retry...maybe a finer grade of coconut releases more starch to hold the shape is all i can think of,,,
