840. Malteasers Bars


Until not too long ago, there was an unreasonable obsession with striving to make food look like it were factory produced in uniformity and shape. Now, not so much. Mass produced products often contain a calculated imperfection or two in a marketing attempt to convey a home-made and hand-made air.
I personally appreciate a rustic or hand-made touch here-and-there because it feel it conveys a certain warmth or loving care. Nonetheless, I was very proud of how these bars came out because they could be mistaken for shop-bought or factory-made in their perfection. Adapted from here.


Ingredients:

250g pkt plain sweet biscuits
2 cups rice crispies
1/2 cup butter
395g tin sweetcondensed milk
2 Tbsp cocoa
3/4 cup maltesers, cut in half
200g white chocolate
1 Tbsp coconut oil
Whole maltesers, extra

Method:

Line a 22cm  square baking tray with baking paper.
Crush biscuits in a food processor.
Pour biscuits into a large bowl along with the rice crispies and the halved maltesers.
In a saucepan over medium heat, add butter, condensed milk, and cocoa.
Whisk until melted together and smooth. Cook for 1 minute.
Pour over dry ingredients and mix until combined.
Press firmly into tray.
Break white chocolate into a bowl and heat with the coconut oil in microwave in 30 second bursts, stirring each time until smooth.
Pour over slice.
Press remaining maltesers into the chocolate.
Refrigerate until hardened before cutting into uniform bars.
