845. Grilled Mortadella Cheese Pita


Grilled sandwiches seem to be a multi-cultural favorite knowing no borders nor continent.
From the Mexican, to the British, Italian, American, and beyond. Today's is the Arab version (one of many), using the famous Lebanese pita bread.
There seems to be something irresistible about hot, melted, stringy cheese. Layers of melty cheese stacked with thin slices of mortadella and pickled jalapeno. Fancy a spicier take? Sub the mortadella with basturma or sujuk slices.


Ingredients:

Lebanese pita bread
slices mortadella
slices pickled jalapeno
grated cheese (kashkaval or other)


Method:

Open the pita bread and sprinkle grated cheese on both sides from the inside.
Arrange some mortadella and jalapeno slices. Seal the pita like a quesadilla.
Brush the exterior of the bread lightly with oil.
Grill the pita on both sides in a hot pan until golden.
Consume while still warm.
