880. Green Beans Gremolata


This green beans side dish is a wonderful compliment to poultry, red meats, or fish alike.
Gremolata is an Italian condiment made of lemon zest, garlic, and chopped parsley. This gremolata has added substance by  adding fried fresh breadcrumbs to the mix.
The beans are partially cooked in water, then set aside. Just before serving, they are warmed up in some hot oil before being sprinkled with the crispy-crunchy toast gremolata. Once the gremolata is added, this must be served immediately.



Ingredients:

450g fresh green beans
2 slices fresh toast bread
2 Tbsp butter
2 lemons, zest only
1/4 cup chopped parsley
1/4 cup fresh grated Parmesan
2 cloves garlic, grated
1/2 cup salt & pepper
2-3 Tbsp olive oil


Method:

Boil or steam the green beans for 3-4 minutes until cooked but still have a bite to them.
Directly transfer to an ice bath to cool.
To make the gremolata, process the fresh toast to crumbs.
Heat the butter in a pan and saute the fresh crumbs over medium heat until golden and crispy.
Take the pan off the heat and stir in the grated lemon zest, chopped parsley, grated parmesan, grated garlic, and seasonings.
Just before serving, drain the green beans, pat dry, and saute in a clean pan with hot olive oil until warmed through.
Put the warmed green beans in your serving dish and sprinkle with the gremolata.
