947. Watermelon Avocado Salad

 

For the larger part of Ramadan, this salad has been my iftar meal. It is hydrating, refreshing, delicious, nutritious, and so so easy to put together. This is a recipe where all you do is literally assemble all the ingredients, and you're done!
All the ingredient quantities are subject to your personal preference. The recipe below is sufficient to feed 2 or 3 people, depending on how hungry everyone is, and is very easy to double or treble.


Ingredients:

1 wedge watermelon
1 ripe avocado
2 Tbsp feta cheese
3 sprigs fresh coriander
1 lime juice
2 Tbsp olive oil


Method:

In the serving dish, arrange the watermelon cubes, followed by the ripe avocado cubes or wedges, followed by snippets of feta cheese.
Chop the coriander leaves and sprinkle over the top.
Just before serving, drizzle the surface with fresh lime juice and olive oil.
All ingredient quantities are relative to personal taste.
