949. Iraqi Marinated Olives


A stunning starter, an eye-rolling main dish, and a decadent dessert are all wonderful, but what really makes a meal over-the-top are the small touches. The kind that one's hand always reaches for while the head is turned away in conversation. Pre-meal nut nibbles. Side-note pickles. Accompanying bowls of caramel sauce.
These marinated olives fit into that category. Plain brined olives are jazzed up in an oil-based mixture of spices, herbs, and garlic, then jarred and refrigerated until needed. Keeps wonderfully well covered and refrigerated for a good while.



Ingredients:

500g brined olives, drained
1 tsp dried thyme
1/2 cup chopped parsley
8 cloves garlic, grated
1 tsp coriander powder
1/2 tsp chili powder
1 cup olive oil
1/4 cup vinegar


Method:

Mix all the ingredients except the olives in a large bowl.
Toss in the olives to fully coat.
Store refrigerated in an air-tight jar.
