1005. Cheesy Garlic Baguette


Sometimes, shortcuts are the best way to go. I usually prefer making something as wholly as I can home-made. So I have made garlic bread from scratch before, but using a bought baguette is much faster.
A garlic-flavored butter is smeared over the cut baguette, and topped with a grating of mixed cheeses. This melts and sets beautifully in just 10 minutes in the oven, and makes of an ideal side to a meal.


Ingredients:

1 baguette
50g butter, soft
2 Tbsp olive oil
1/4 cup chopped parsley
6 cloves garlic, grated
1 1/2 cups shredded mozzarella
3/4 cup freshly grated parmesan


Method:

Preheat oven to 350F. Cut the baguette lengthwise in half, place cut-side up on a baking sheet.
In a bowl, mash together the soft butter, olive oil, chopped parsley, and grated garlic. Spread the butter mixture over the cut sides of the baguette. Sprinkle with the grated mozarella and parmesan.
Bake for 10-15 minutes until melted, golden, and bubbly. Allow to cool slightly before consuming while still warm.
