1019. Creamy Lemon Linguini


One-pot meals are gaining popularity fast. A certain ex-con made a pretty penny by writing a cookbook with solely one-pot recipes. One-pot pastas are the leading trend in that category. My first try-out was in fact a couple years ago, here.
This one though is specific to lemon affectionatos. Pasta of your choice (I went for linguine, the wide and flat spaghetti, but not quite tagliatelle) is simmered in sliced lemon, fresh basil, cream cheese (for an unctuous finish), and broth. The simmering liquid is reduced to a thick creamy sauce, by which time the pasta is cooked and the lemon and basil have done their part and get discarded.


Ingredients: (serves 4)

400g linguine pasta
2 lemons, sliced
2-3 stalks fresh basil
60g cream cheese
6 cups broth


Method:

Put all ingredients in a pot, bring to a boil, and cook covered over medium heat for about 7 minutes.
Uncover, stir, and let boil for about 10 minutes more until the sauce is thick enough for your liking.
To serve, discard the lemon slices and basil stalks. Serve immediately with a side of freshly grated parmesan.
