Being blessed with abundant date fruit, us Arabs cannot have enough different ways to get creative in their consumption. These Iraqi honeyed dates (التمر المعسل)are actually an ancient technique driven from a necessity to preserve dates while keeping them moist and chewey, as dried dates can sometimes get a bit tough.
Basically, these honeyed dates are the ancient equivalent of modern day candy. The is no honey used here at all; rather, we use date molasses.
Ingredients:
1kg dried dates
1kh date molasses
1/2 cup roasted sesame seeds
1 tsp ground ginger
1 tsp ground cardamom
Method:
In a medium saucepan or deep frying pan, bring the date molasses just up to a boil over medium-high heat. Turn off the heat and stir in thoroughly the ginger, cardamom, and sesame.
Add the dried dates and toss to coat in the mixture. Store in glass jars and seal while still hot or warm.
Keeps for several months. When spooning out, make sure to never use a wet spoon as it will cause it to spoil.
