1125. Applesauce Cake


Every once in a while, I like to buy at least twenty golden delicious apples and make a couple jars of compote with them. I enjoy my compote for breakfast or even a light snack. Sometimes, I have a surplus, and this cake makes wonderful use of that. Combining oats, yogurt, and applesauce, I am almost tempted to call this a healthy cake, were it not for the bits of flour and sugar rendering it a healthy-ish cake.
Well, you can't win them all. Debate aside, this cake is perfect for breakfast with a steaming mug of coffee as it is for an afternoon tea. The glaze, which also uses apple compote, is what really sets this cake apart.


Ingredients:

2 cups flour
1 cup rolled oats
pinch salt
1 tsp cinnamon powder
1 tsp baking powder
1 cup sugar
3/4 cup oil
2 eggs
1/2 cup yogurt
1 cup applesauce

For the glaze:
1 cup powdered sugar
1/4 cup applesauce


Method:

Preheat oven to 350F. Line two regular or 1 large loaf tins with parchment paper; set aside.
In a bowl, combine the flour, oats, salt, cinnamon, and baking powder; set aside.
In another bowl, whisk the sugar, oil, eggs, yogurt, and applesauce until combined. Fold the flour mixture into the wet ingredients until just combined. Pour into the prepared tin(s) and bake for about 40-45 minutes for the smaller tines, or 1 hour for the larger tin, until a skewer comes out clean.
Remove from the oven, and whisk together the sifted powdered sugar and applesauce for the glaze. Pour the glaze over the still-hot cake loaves while still in the tin(s) and set aside to cool completely. Once completely cooled, unmold and consume.
