1132. Superfood Breakfast Bars


The previous "regular" muesli bars version here easily replace packaged granola bars in my opinion. Totally customizable, and just as moreish, they are definitely one of my favorites. This version is Nigella's "healthified" breakfast bars, which are chockful of all things good for your body. Healthy does not necessarily mean food good for losing weight, and eating too much from these will not aid your weight loss journey, but they do promise to be a healthy breakfast or snack.
Being gluten-free, dairy-free, no added sugar and enough seeds that you feel healthy just chewing it, you can make these bars at the weekend for a week of grab-and-go breakfasts in the morning.


Ingredients:

1 ½ cups dried pitted dates
2 tsp ground cinnamon
¾ cup goji berries
½ cup pumpkin seeds
½ cup sunflower seeds
¾ cup flaxseeds
½ cup cocoa nibs (or chocolate chips)
3 Tbsp chia seeds
1 cup cornflakes
1 cup rolled oats (not instant)


Method:

Preheat the oven to 350F, and line the bottom and sides of a 20cm/8in square tin with baking parchment.
Pit the dates and tear them with your fingers into a small saucepan, add the cinnamon, cover with 1 ½ cups cold water, bring to the boil and simmer for 5 minutes. Turn off the heat, and beat with a fork until you have a rough purée.
Put all the remaining ingredients into a large bowl, add the date mixture and mix until everything is combined.
Press into your prepared tin and bake in the oven for 30 minutes, until firm and set, and golden on top and darker around the edges. Leave to cool in the tin before cutting into pieces.
