1183. Tiramisu


While you can find a tiramisu recipe on MCW or three (1,2, 3), this is the real traditional recipe using mascarpone and eggs, minus the alcohol. The other versions incorpostae cost-effectiveness and ease by using cream cheese instead of mascarpone.
Now there is some uncooked egg in here, so be sure to use the freshest and safest eggs. As is usual with recipes using uncooked eggs, do not serve to pregnant women, children, or the elderly.


Ingredients: serves 4

3 eggs
4 heaped Tbsp sugar
2/3 cup concentrated hot coffee
grating nutmeg
1 tsp vanilla
250g mascarpone
16 ladyfinger biscuits


Method:

Stir two tablespoons of the sugar in the hot coffee to dissolve. Transfer to a shallow bowl and set aside to cool.
Meanwhile, separate the eggs in two bowl and whip the whites until stiff and fluffy; set aside.
In the other bowl, whip the egg yolk with the remaining two heaped tablespoons of sugar until tripled in volume and a very pale yellow in color. Beat in the grating of nutmeg, vanilla, and mascarpone until smooth.
Carefully fold the whipped egg white into the egg yolk mix, keeping it airy but homogenous.
Dip the lady fingers into the cooled coffee and arrange into a single layer into your serving dish. Add a third of the mascarpone mix. Repeat two more times, ending with the mascarpone layer. Top with a scant layer of grated chocolate.
Refrigerate overnight to firm up and amalgamate the flavors before serving the next day.
