1189. Whole Wheat Tea Biscuits


Admittedly, I made these tea biscuits to try out my new stamp cookie cutter. But whether you have a cutter like this or not, these whole wheat tea biscuits are a delight to dunk in your, well, tea.
If you do have or get a cutter like this, welcome to the world of cookie messages. The preset stamps of "happy"and yummy" made me purchase the entire alphabet to write cute messages on future biscuits.



Ingredients: makes 24 or so

2 cups whole wheat flour
1 tsp baking powder
1/2 tsp salt
3/4 cup powder sugar
1/2 cup butter, very cold
1/4 cup cold milk


Method:

Preheat oven to 350°F. Ready a cookie sheet with parchment paper or a silicon baking mat.
Cube the butter and set in the freezer for 15 minutes until hard.
In a food processor, combine the flour, baking powder, salt and sugar. Blitz the butter into the dry ingredients until the mixture is pebbly. Add the milk and blitz to form a stiff dough.
Using a well-floured rolling pin, roll the dough out to a bit more than 1/8 inch thick and cut into rectangles or rounds, about 2 1/2 inches in diameter. You can keep rolling the scraps together to make additional dough.
Transfer the biscuits to your baking sheet. Bake 15-20 minutes until biscuits are pale gold.
Best served alongside some steaming tea and used for dunking.
