1213. Amaranth Power Cookies


These amaranth power cookies are chock-full of super nutrient-dense ingredients and can only be made with absolute love. Be it a mother for her child or you for yourself, you cannot go wrong in making this.
I recommend making a batch then freezing it. Take it out a few hours before (place it in the fridge directly from the freezer the night before) for the perfect snack on the go. Change it up by adding chocolate chips or switching the type of dried fruit.



Ingredients:

1 tsp chia seeds
1/2 cup walnuts
1 Tbsp flax seeds
2 cups oats
1/2 cup brown flour
1 Tbsp sesame seeds
1 Tbsp pumpkin seeds
6 Tbsp popped amaranth seeds
1/2 tsp baking soda
1 egg
1/2 cup date molasses
1 tsp vanilla
1/2 tsp cinnamon
1/2 cup dried figs


Method:

Soak chia in 2 tablespoons of water, set aside. Toast walnuts; chop when cooled. Grind flaxseeds to a powder.
In a food processor, blend the oats, flour, seeds, baking soda, and walnuts into a fine consistency.
Add the egg, coconut oil, date molasses, vanilla, cinnamon, soaked chia, ground flax, and chopped dried figs. Pulse again until combined.
Shape into walnut-sized balls, press down with a fork, and bake in a preheated 375F oven for 12-14 minutes. Cool completely.
