1219. Salmon Pasta


This is a pasta dish worth buying a fresh salmon fillet for. What's so great about it is that you can just as deliciously make it from leftover cooked salmon. It is a salmon carbonara, if you will.
The choice of pasta shape is yours. I would deem a fresh grating of parmesan compulsory.


Ingredients: serves up to 4

250g pasta (linguini)
250g cooked salmon
1 cup cream
1 clove garlic, grated
2 Tbsp chopped dill
2 eggs
s&p
fresh parmesan to garnish


Method:

Cook pasta according to package instructions.
Meanwhile, flake the salmon into a blow and mix the remaining ingredients.
When the pasta is cooked, working fast, drain the pasta and pour in the salmon mixture off-heat, tossing like a salad all the while to set the eggs into a silky smooth sauce.
Serve immediately with some freshly grated parmesan over the top.
