1223. Fresh Tomato Toast


Now this is a sandwich that needs to be made and consumed at the height of tomato season, when tomatoes actually taste like tomatoes. Naturally the question of using butter instead of mayonnaise pops up.
I am here to testify that as a person who avoids mayonnaise when possible, the sandwich is lesser if made with butter. Truly the mayonnaise is irreplaceable in this context.

Ingredients:

Milk bread toast
mayonnaise
ripe but firm Summer tomato
salt

OR
Mini flat bread
fresh ricotta
ripe but firm Summer tomato


Method:

Toast your bread. Spread with mayonnaise. Top with slices of fresh, seasonal, ripe, firm tomato. Sprinkle with salt and consume immediately. Not recommended to make ahead.
