1241. Whole Roast Lemon and Herb Fish


Whole roasted fish inevitably reminds me of The Hobbit, when Bilbo just settled for his dinner before the intrusion of the dwarves. Surely that's an indicator of not only how easy it is to prepare, but also of how long people have been preparing it?
The wonderful thing is that you can use a small fish to serve one or a giant fish to serve many. The concept is the same, although obviously the roasting times would differ.


Ingredients: serves 4

1 large whole fish (2kg), scaled and gutted
1-2 Tbsp olive oil
1 head garlic, halved
1 lemon, sliced
handful of fresh herbs (such as sage and dill)
salt & pepper



Method:

Heat oven to 400°F.  Line a rimmed baking sheet with aluminum foil to ease with the clean up, then rub oil on the foil so the fish won't stick.
Brush the fish generously on both sides and inside with oil.  Season generously inside and out.
Stuff the belly with the lemon slices, halved garlic head, and the whole fresh herbs.
Roast the fish in the preheated oven for 25-35 minutes, or until the fish flakes easily with a fork.  (Cooking time will vary depending on the size/variety of your fish.)
Remove from the oven, and squeeze extra fresh lemon juice over the fish. Serve hot with your favorite sides.
